Recipe for Pasta Sauce with Meat

Pasta sauce out of a jar or can? Ick. In addition to being full of nasty preservatives, the pre-made stuff lacks soul. If you’re a fan of chunky, veggie-filled, and meaty sauce for your spaghetti, manicotti, and other Italian meals, give this recipe a shot. Yes, it takes a lot more time than just grabbing something from the pantry, but it tastes so much better. Also, you can double or quadruple the recipe and freeze (or can, if you’re into that) the leftovers for later use.

Ingredients

  • 1 lb. ground beef
  • 1 small onion, diced
  • 1 green pepper, diced
  • 1 28 oz. can diced tomatoes
  • 3 8 oz. cans tomato sauce
  • 2 tbsp. garlic
  • 1 tbsp. Italian seasoning
  • 1 tsp. kosher salt
  • 1 tsp. ground pepper

Instructions

  1. Brown beef. Drain, if needed, then add onion and pepper and cook until vegetables are translucent.
  2. Transfer meat mixture to large sauce pot. Add tomatoes, sauce, garlic, seasoning, salt, and pepper. Cook over low heat for at least one hour, allowing flavors to meld.

Easy Cheeseburger Soup Recipe

The food: It’s always handy to have some recipes in your back pocket for those nights when it seems there’s nothing in the house to eat. This cheeseburger soup is a great example. It’s a fantastic way to use up leftover ground beef, and it comes together so quickly that you can make it and eat it in less than half an hour. Plus, you get protein and veggies (along with cheese, because cheese makes everything better). Cheeseburger soup isn’t glamorous, but it’s easy, quick, and sure to please picky palates that would rather visit the golden arches than eat a home-cooked meal.

The music: During a music-filled road trip a couple of years ago, my friend Megan and I decided we should evaluate future boyfriends on just one criteria—does he like Phil Collins? Those who don’t should be kicked to the curb. Phil’s a genius and 1985’s “No Jacket Required” is a classic. Imagine my horror, then, to learn the man of my dreams hates Phil Collins—I mean loathes and wishes ill will upon. Lucky for him, I gave my man a pass on this obvious shortcoming (don’t tell Megan), and wait until he’s not around to listen to Phil. This LP kicks off with its biggest hit (and my least favorite song on the album), “Sussudio.” You can make this soup before Side 1 wraps, and then eat while listening to Side 2, which is bookended by big hits—”Don’t Lose My Number” and (my favorite) “Take Me Home.”

Ingredients

  • 1/2 lb. ground beef
  • 1 tsp. garlic
  • 1/2 cup carrots, chopped
  • 1/2 cup onion, diced
  • 1/2 cup celery, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. basil
  • 1 cup chicken broth
  • 1 tbsp. butter, softened
  • 1/8 cup flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the ground beef.
  2. Add garlic and carrots. Cook 2-4 minutes. Add onion, celery, salt, pepper, basil, and broth. Bring to a boil, then reduce to a simmer. Cover. Cook 5 to 7 minutes, until vegetables are softened.
  3. Add butter. Stir in flour slowly, so it doesn’t clump. Add milk cheese.

Slow Cooker Chicken Chili Recipe

The food: When the temperatures drop, I often fire up the slow cooker and make warm and hearty chili. Although I really like spicy red chili, sometimes I want something milder. On those days, chicken chili fits the bill. There’s still plenty of kick in this stew, thanks to the chili powder and jalapeño, but the chicken, white beans, and broth are a little easier on the stomach than beef, red beans, and tomatoes.

The music: Easygoing comfort food goes best with easygoing comfort rock. The Allman Brothers Band were the Founding Fathers of Southern rock, a sound that is equal parts country, blues, and rock-n-roll. “Brothers and Sisters” is their fourth studio album, coming out in 1973, hot on the heels of their mega successful “Eat a Peach” album, and following the deaths of key band members Duane Allman and Berry Oakley. Recorded on the historic Capricorn Sound Studios label (this NPR story offers a quick history on the studio), the album includes the band’s only big single, “Ramblin’ Man.” These guys like to jam, so there are only seven songs on the album, but it’s perfect for sitting down and relaxing on a cold day with chili.

Just like this worn 70s album, chili gets better with age. What you see in these photos is the chili right after it cooked for 4 hours. It was darn tasty then, but it gets thicker and more flavorful the longer it sits. Also, mashing half of the beans before cooking the chili is a neat little trick for thickening up the stew.

Slow Cooker Chicken Chili

Ingredients

  • 1 tbsp. oil
  • 1 lb. chicken
  • 1 1/2 tbsp. chili powder
  • 1 small onion, chopped
  • 1 jalapeño pepper, diced
  • 2 15-oz. cans of white beans, drained and rinsed
  • 1 14.5 oz. can chicken broth
  • 2 cups shredded cheddar cheese
  • ¼ cup sour cream

Instructions

  1. Heat oil in skillet over medium-high heat. Add chicken. As it cooks, use a fork to shred the meat. Add chili powder. Cook until browned. Add onion and pepper; cook until tender. Transfer to slow cooker.
  2. Mash half of the beans in a small bowl. Add mashed beans, along with remaining beans and broth, to slow cooker. Cook on low for 4 hours.
  3. Serve topped with cheese and sour cream.
